What is Cacao
Theobroma Cacao 'Food of the gods’ is a tree that produces cacao beans, the main ingredient in chocolate, this is also where cocoa powder and butter come from. Think dark chocolate then take away the processing, sugar and added fat.
Traditionally cacao was made as a drink rather than eaten but don’t let this stop you from using it in your favourite recipes, it is one of the most nutrient dense foods able to be consumed by humans and as a superfood blurs the line between food and medicine.
Beans are fermented, dried and lightly roasted, shelled and then ground into a paste that is hard at room temperature. Quality cacao paste, sometimes known as ceremonial cacao, is made from shade grown cacao that is grown organically and sustainably in respect of the environment the tree and those who farm it.
It has high concentrations of antioxidants and magnesium o a good source of zinc, calcium, potassium chromium, iron, copper, selenium and manganese, omega 6 fatty acids and vitamins A, C and E. It has small amounts of caffeine (usually less than green tea) but the main stimulant theobromine is gentle, powerful and long acting unlike the short often jittery high and subsequent crash from high levels of caffeine.
It also contains naturally occurring chemicals and neurotransmitters which can help to stimulate feelings of love, positivity, happiness and being uplifted. Cacao is believed to be a heart opener facilitating connection with oneself and others and has been used throughout history in all types of rituals and celebrations which differ significantly from modern cacao ceremonies. The mildly psychoactive properties of cacao can support and deepen meditation, yoga and other embodied practices and it is often used to facilitate flow state.
In some cultures cacao was strongly associated with supporting women's health through pregnancy, childbirth, breast feeding, the menstrual cycle and menopause. This being said it was also used to give strength and stamina to men and is known for its cardiovascular benefits.
